Fuffy Nutties (grain free cookies)

1 c. Bean Flour
1/2 c. Honey
1/3 c. Coconut Oil
2  Eggs
1/2 tsp. Baking Soda 
1/4 tsp. Salt
1/2 c. Peanut Butter (or any nut butter)
1 dropper full stevia

Cook 350 till golden brown.

Bean Flour

I just blended up a bag of navy beans, that's it. 
I did not soak them, but for those who r sensitive, soak, and dry them, blend or grind.

Sailors Beware (Bean Bread)

Ingredients
2 cup Navy Bean Flour
1/4 cup Flax Meal
1 Tsp Baking Soda
2 Tbs Kifer or Yogert 
4 Tb Butter
1/2 Tsp Salt 
4 Eggs
1 cup Water

Blend in a blendtec or vitamix until smooth, and sticky, or u can use a mixer. 
Bake at 350 till golden brown.

Honey Bee Biscuits

1 1/2 cup almond flour
4Tb honey
20 drops vanilla stevia
2 eggs
1/4tsp baking soda

Cook on 350 Till golden brown, and drizzle with honey Optional

Bucha Bucha ;0)



Kombucha
Lets make this easy! 
Such an awesome drink,
and easy drink to make.
It really could not get any easier.

Ingredient list:
Black Tea 
Gallon Jar
Organic Sugar
Gallon of spring/distilled water
Cheese Cloth 
Rubber Band
Wooden or plastic spoon

(Remember never use anything metal while working with a Scoby, it can damage the it.)
(and never wash your hands with antibacterial soap, it will mess with the mojo in your jar.)

Now

 A gallon jar. 
My husband and I went out and got 4 huge jars of pickles,
just for this, it was a lot of pickles to eat, but I can not say he didn't enjoy it. LOL
So once you get you jar, clean it well, just run it though the dish washer.
Then you will need a gallon of water spring/distilled will do.
 You do not want just filtered water from your fridge, 
unless you have a really good filter that removes chlorine,
 because Scobys are not fond or chemicals :0)
Poor some of your water in a pan and bring to a boil. 
Then steep about 7 to 10 tea bags in boiling water. I use 8! 
Once you reach your desired strength,
 you r going to poor your tea in the fermenting jar. 
Then stir in a cup of sugar until completely dissolved. 
Add the rest of your water,  it should be a little warmer then room temp about 75*
Then add your Scoby friend, and cover with a cheese cloth and a rubber band.
Now depending on how big your Scoby is, will depend on how long you need to ferment it.
Now I have some monsters, that will brew a gallon in 3 to 4 days.
Then best way to know if your Kombucha is done, is to taste it.
Its not going to kill u;0)
Usually it takes a week. You also want to keep it in a dark warm place, but not in a closed cupboard where it will not get air. I keep min on our deep freezer in our laundry room. It does not have any windows so it is perfect.  When it starts to smell slightly like vinegar, you can taste. 
Yes, there is a fine line, but u r looking for something sour/tangy and a tinge or sweet. You really do not want a whole lot of sweet taste, but of course you do not want vinegar either. 
The best way to figure this out is a quick spoonful to the taste buds.  
When you active this perfect state in your Kambucha, strain it, then you will be ready to refrigerate and drink. 
If u drink it like a tea you can add a bit of honey or a little flavored Stevia, You can even add some of your favorite fruit puree. Mango, Strawberry, kiwi, blueberry, Lemon, Ginger or whatever you want.
If you decide to take it a step further, this is called secondary fermentation.

Secondary Fermentation
If  u decide to do this, u can just bottle or u can add a bit of fruit puree,
usually the ratio is 1 part puree to 2 parts Kombucha, or less. 
Just experiment, and see what u like, u can not go wrong. 
Bottle and cap, and let sit out for 24 to 72 Hour. During this processed,  your Kombucha will create carbon dioxide, and become quite bubbly, like pop. During this time period u may want to try a bottle here or there. Kombucha can become quite explosive if u are not careful. After u get your desired fizz, refrigerate, and enjoy.
Then u start the process all over again.

PS My 3 year old can not pronounce Kombucha so she calls it Bucha!

Shhhhh Chocolate Pudding


6Tb honey
2 Avocado
20 Drops of Vanilla Stevia
6Tb Coco Powder 
1/2 Cup of water or milk of your choice

For darker chocolate add one more Tb of coco
Blend in Blendtec, or with mixer. Chill and eat; 0) or Use as a fruit dip.

Dill Dip/Salad Dressing

1/4 of a Avocado 
1 1/4 raw Milk Kefir
1/2 tsp Dill
1/2 Sea Salt
Blend and serve over salad, or use as a chip or veggie dip.

Burn B Gone

Kid u not, today I touched my hand to the element while cooking my Portopizzas. Ouch!!!!! But not for long. I quickly got my raw kefir and slathered my hand, and bandaged it right up. Talk about instant burn cure!!!! Yup, u heard me right!!!! No hot spot, no burning.  Gone:0)

Chocolate Peanut Butter Banana Bites

Cup of peanut or nut butter mixed with 1/4 cup of honey.
Cut banana into bit size and spread out on sheet.
Drop nut butter mixture on banana slices.
And drizzle with chocolate drizzle.
place in the freezer for 5 min

UnStuffed Cabbage Casserole



One head of cooked cabbage. Slice each leaf into strips like noodles. 


Cook your Organic beef with 2 heaping Tb of fresh diced garlic 1 tsp of sea salt 1 tsp dried bay leaf 1 tsp dried marjoram.



In a bowl take half of your cut cabbage, and mix it with 1/3 of a jar or home made or organic spaghetti sauce.

Layer the cabbage,  meat, sauce and cheesed. Feel free to add a layer of pepperoni, fermented peppers, or whatever u like. Make sure the Top layer is sauce and cheese. If u cannot have cheese, feel free to leave it off.


Bake on 350 for 45 min and sprinkle with cheese when done. Enjoy

Little Monkey Snacks

These are a Favorite in my house.
Like Candy!!!
For nice crunchy Banana Chips,
 cut about quarter size thick pieces. 
and follow drying  instructions for your dehydrator. 
Yummy!!!

Garden Eggs


Fresh Pastured Eggs
Organic Spinach 
Tomatoes
Fermented Peppers
dash of garlic, salt, and peppers
Top with Cheese
and Avocado

Serve with a side of vanilla kefir and fruit. 

South Western Ranch Dip (kefir)

1 cup homemade kefir
1/4 of an avocado
1/4 tsp basil 
1/4 tsp oregano
Dash of garlic 
Dash of onion
1/5 tsp salt

Guiltless Chocolate Covered Strawberries

Directions
In a bowl Crumble Biscuits, 
add cooked  and (cubed Small) butternut squash, 
and shredded chicken. Mix in bowl  and poor into baking dish.
Mix shredded cheese with 2 or 3 Tbs pesto and top casserole.
Bake till Cheese Is melty and enjoy!




Cheesy Garlic Biscuits


1/4 cup Butter
1/3 cup + 2 Tbs Coconut Flour
1/4 Tsp Salt
 4 eggs
1/2 cup Shredded Cheese
1/4 Tsp Garlic Two Cloves
1/4 Tsp Baking Soda

Butter Topping
1/3 cup Butter
Dash of salt
1/4 Tsp Parsley 
Dash of Garlic

Directions
 Blend eggs, salt, garlic, butter, baking soda on high for 45 sec
in a bowl mix coconut flour, and shredded cheese, Then mix in liquid mixture.
Drop with spoon on cooking stone/Sheet.
Cook 350 for 15 min or till golden brown.
Brush with butter topping.

1 Butternut Squash
Butter
Eggs over easy
Salt and pepper to taste

This is my Favorite,
 Breakfast,
 lunch,
 or dinner,
 and what the heck, how about snack. 
Anyway, You have to try this, you will LOVE!!!

Bake Squash Till golden brown, or till u can stick a knife in it easily. 
Depending on how big your squash is, and I love butternut squash, 
so I get the biggest one I can find!!!! I bake mine for an hour, and it is a large one. 
But feel free to poke that sucker  as much as you want. 

Remove squash from outer shell, mash, and slather with organic butter!!!!
Top with pastured eggs over easy, and salt and pepper to taste. 
Eat up!!!



Bread Crumbs Grain Free


Ingredients
1 cup unsweetened coconut 
1/2 cup Almond Flour
Tsp salt
Blend till fine just before reaching flour consistency.
Add any flavor u want depending on what your breading.  

Salmon Patties grain free

2 cans of salmon
1Tbs. Parsley 
1tsp. salt 
3 pastured Eggs 
Mix all ingredients pat into patties.
and roll in grain free bread crumbs.
Then fry till golden brown.

Vanilla Icing



Ingredients:

4 Tb. room Temp Butter
3Tb. Y.S. Honey
2 Droppers Full Stevia
1 Tsp. Vanilla

Directions:
Blend with mixer on high, 
or cream with fork.



Cake Balls Anyone? Gluten, grain

 Ingredients: Cake
1 1/2c Almond Flour
4 Pastured Eggs
1/2 c. Local Honey
1 to 2 droppers full Stevia
1 1/2 Tsp Baking Soda
a dash or Salt

Directions:
Blend all ingredients in Blentec until smooth, 
u will find this mixture to be quite liquidity. 
Grease Pan, pour
Bake 350 till golden brown and spongy.
Let cool and Crumble

Cut icing into cake mixture , you are looking for a half and half cake icing ratio.
Hand roll the cake balls.
Save a bit of icing to add a dollop on top of  each ball.

I'm All Pickled!!!!!


I don't have to mention, Gut flora, because you all know how important to every day immunity it is!
This is a wonderful, more effective, and inexpensive way to heal, replace, and just strengthens gut flora. 
For those of u that don't know about fermented veggies, I will post some links!
Just some reasons you may consider fermentation above other food preservation methods. Fermented foods provide and inexpensive, vitamin and enzyme  rich  foods, making it so much easier for your body to digest and absorb. This way you r getting as much from your veggie meetings as possible. Not only do they taste better, but they r going to provide u with free health care, healing, balancing and nurturing your damaged gut.


You Know I like to keep it simple!!!
I stick with what I like, so this is my recipe!

Mix 2 Tsp salt to 2 cups Distilled Water
Cut veggies into sticks and firmly pack into jars.
Add two cloves of Garlic 
1 tsp of mustard seeds
 2 tsp of dill

Optional  
Sometimes I also love to add 1 tsp basil.

You can uses your creativity, and add just about any herbs u like
this is just our Favorite!!!

Then pour the salt water brine over the veggies. You want the veggies to be completely covered,
and only want to have about an inch of air space in you jar. 

Let sit on your counter for a week, I always open jar daily to degas. 
You can go longer if u would like with some veggies. 
Just taste after a week, they should be perfect.
Then refrigerate. 
My ferments last for months, if they even make it that long, because we eat them up!!!
Oooo, and if your kids r not feeling veggie, I give my kids some of the juice. 
I also add the juice to my babies homemade baby food, use all that yummy goodness!!!

Well love peppers, carrots, and my oldest favorite is broccoli, 
but you can pickle just about anything you like!

Grain Free Cereal



Ok this inspiration came from a major craving for cereal.
It was overwhelming, and I could hardly stand it. 
So desperate measure had to be taken!!!!!
This hit the spot and kept going. 
Hope u all enjoy!



Any combo will do. 

Ingredients:
Handful of 
Pumpkin seeds
Sunflower seeds 
Raisins
Banana or Apple or both
Flax meal
Top with Milk of your choice
And always remember soak your nuts!

Don't Drop The Eggs!!!


You Will Need
Large Stock Pot
Home made Chicken Stock
2 Tsp Sage
Half Stalk of Green Onions 
About 7 pastured Eggs
 (depending on how much egg u like.)
salt and pepper to taste

Bring stock to boil add green onions sage salt and pepper.
Beat eggs and slowly pour eggs into the stock.
Optional you can add shredded chicken if u want.
Cook for 10 min and done.
